I was watching Martha Stewart’s morning show on my TIVO and she had Byron Martin, the owner of Logee’s Greenhouse on talking about indoor fruit trees. He had a Cinnamonum Zelanicum or cinnamon plant with him. He shared his recipe for making perpetual cinnamon or cinnamon extract which can be used in any recipe calling for cinnamon powder.
Materials: 5 ounce bottle, Vodka, 3 or 4 cinnamon sticks
Directions: Place cinnamon sticks in the bottle. Cover with Vodka. Allow mixture to sit for 4 weeks and then it is ready to use. After you use all the cinnamon extract, simply pour more vodka over the sticks and allow 4 weeks to pass and then use again. Perpetual cinnamon lasts three or more years.

Ooh, I will have to wait a few months to try this one, I am preggers right now, but I love vodka -so I am sure I will like this.
